Brownie Cookie Dough Cake

I know, right?  The title says it all.  This is possibly the richest cake I have ever eaten. In fact, the cookie dough butter frosting was so good, I thought we may have just plain brownies instead.  NOT kidding.  Be careful.  Even though you’ll want to keep eating it, you may put yourself over the edge with its sweetness.  Here’s the recipe.

BROWNIE COOKIE DOUGH CAKE

Brownie Part:

I suppose you could just use a box mix, but I used a homemade one.  I used 2 8X8 pans and divided the dough between them.  Spray the pans well will cooking spray, or use parchment paper to make unmolding easier.

  • 1 and 1/2 cups vegetable oil
  • 3 cups sugar
  • 1 Tbs. vanilla extract
  • 6 eggs
  • 1 and 1/2 cups flour
  • 1 cups cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Mix the vegetable oil and sugar togetherwith the vanilla and eggs.  Mix the dry ingredients together and add gradually to the sugar mixture until completely incorporated.  Divide the dough between two 8X8 pans sprayed well with cooking spray and bake in a 350 degree oven for about 25 minutes.  Check it at 20 minutes just to be sure and not overbake.  Let cool and then unmold on a plate for the bottom and spread with Cookie dough frosting–recipe follows.  Unmold other brownie on top of frosting and complete with cookie dough frosting on top.

Cookie Dough Frosting Part: Cookie Dough Frosting

Like I said, I could’ve eaten the whole bowl of this, on toast, on a cookie, on an apple, or just right off the end of my finger.  This is the stuff people dream about–SERIOUSLY!

  • 3 sticks unsalted butter, at room temperature
  • 3/4 cup light brown sugar, packed
  • 3 and 1/2 cups confectioners’ sugar
  • 1 cup all-purpose flour
  • 3/4 teaspoon salt
  • 3 Tablespoons milk
  • 2 teaspoons vanilla extract
  • 1 cup mini chocolate chips

Add each ingredient one at a time mixing until fluffy and light after each addition. Spread on the layers of the brownie and top with ganache.  Look, I know this sounds complicated, but it was not that hard, and sooooo worth it.

Ganache part:

  • 1/2 cup heavy whipping cream
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup light corn syrup
  • 1 tsp vanilla

Heat the whipping cream in the microwave for about 45 seconds.  Add the chocolate chips and corn syrup and stir until chocolate is thoroughly melted.  Add the vanilla and stir again.  Set aside to thicken.  Drizzle over top once the cake is assembled.

Oh, and try not to drool on the cake while you’re putting it together….Ha ha!
