Easy Cheesy Lasagna

Other than buying lasagna from the grocery store, it doesn’t get much easier than this.  You don’t even have to boil the noodles and it comes out great every time.  You can start with our spaghetti sauce found here on our site.  If you use our recipe, add a cup of water to the sauce before starting the lasagna.  The same goes for bottled spaghetti sauce if you decide to use that instead.  Lasagna takes a bit thinner spaghetti sauce to leave room for the noodles.  In any case, whether you use our sauce or not, I think you’ll love this lasagna.easy lasagna

Here’s the recipe in all it’s cheesy goodness.

EASY LASAGNA

  • 6 cups of spaghetti sauce–including the 1 cup of water added (2 containers store bought sauce)
  • 1 pound lasagna noodles
  • 16 ounces cottage cheese
  • 3 cups + 1 cup mozzarella cheese, grated
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup dried parsley flakes
  • 3 eggs

STEPS:

  1. Add the 1 cup of water and warm the spaghetti sauce until bubbly.
  2. Mix the other ingredients together (not the noodles) in a separate bowl, beating the eggs before adding.  Set aside.
  3. In a 9X13 pan, add enough sauce to coat the bottom of the pan.
  4. Lay 3 pieces of lasagna on top of the sauce and coat with more sauce.building the lasagna
  5. Put half of the cheese mixture on top the sauce.cheese mixture
  6. Add three more noodles on top of the cheese mixture and add another layer of sauce on the noodles.
  7. Repeat with the cheese mixture, noodles, sauce once more and top with the rest of the sauce.  Cover and place in oven at 350 degrees for 45 minutes. oven ready lasagna
  8. Uncover and top with 1 cup of mozzarella cheese and bake an additional 10 minutes.
  9. Pull from the oven and let set for 10 minutes.

Serve with garlic toast.  MMMMM can’t you just smell it?
