Blueberry Lemon Cake

Need a good refreshing dessert for summer?  This may be just the recipe for you.  It’s dense like pound cake, with a light lemon flavor and filled with blueberries.  The crust is just crunchy enough without being tough, and well, we just couldn’t stop eating it.  I’ve seen a lot of recipes like it online, so I decided to try my own hand at combining the right ingredients with just the right cooking time for a flavorful result.  This is a long time in the oven though, so plan to be home for a couple of hours. Hot Cross Buns–An Easter Tradition

As I looked toward the Easter Holiday, I needed the perfect Easter food.  Everything I’d made  before seemed so blah, blah, blah to me.  Maybe because I make the same things every year.  Then, it came to me!  Hot cross buns!  Traditionally they’re made on Good Friday and it’s said that if you share one with a friend, your friendship will be solid for the rest of the year.  Well, I’m sharing mine with YOU.  May our friendship stay constant throughout the year and beyond.  HAPPY EASTER!!! I’ve been experimenting lately with pie crust–look for a video to come soon on how to make a great pie crust–so I had to find some use for the crust I made.  I have to say, the video was quite funny, and not in a good way, but as a result, you get a great pumpkin pie recipe.  It’s quite easy and bakes up light and delicious.  This particular recipe is one I make every Thanksgiving from the Farmer’s Home Journal Cookbook.
